Hi,
Does anyone know if it is possible to output 80 meter U and V wind components into the WRF native NETCDF output?

Yes it is possible.
Write the interpolation code to get the u,v wind components at 80 m AGL. There is a diagnostic subroutine that you can probably add to with little effort. Then add your new variables to the Registry.
